This is my very own recipe 🙂 Coming in just around 350 calories.
Super quick and tasty.
Preheat Oven to 350 degrees
Ingredients:
2 pieces salmon-properly thawed. 2-3ozs each
2 tsp paprika (or to taste)
2 tsp cayenne (or to taste)
Pinch of salt
1 tsp grated ginger
3 garlic cloves minced
2 tsp. honey
2 chili bird peppers finely cut (optional)
2 tsp olive oil
1 tbsp chopped parsley
2 tsp chopped cilantro
Juice of 1/2 a lime
Method:
Make a 4 corner foil foil packet/bowl ( so that the marinade stays in and doesnt leak)
Place lime pieces in the bottom of the foil so that the fish can rest on it. (this way the skin side cooks and does not get soggy)
Once the fish is on the lime pieces, sprinkle each piece with the cayenne, paprika and salt.
Place the fish in the oven for 7 mins.
In the meantime- prepare a mixture with all of the remaining ingredients.
Remove from the oven, the fish should be 1/2 way cooked by then. Reduce the oven temperature to 250 degrees. Very gently, make about three slices, on top the fish pieces, not going as deep as the skin. This would be very easy to do, as the fish is almost fully cooked. Pour the mixture evenly over both pieces of fish. Place it back in the oven for another 7 mins.
Remove, serve right away. I served mine with broccoli and mushroom.
