Chicken Quinoa One Pot Dish

Review: I am not sure what the exact cuisine is, as it combines Greek – well 1 Greek ingredient- and Italian ingredients- so although its like a pilaf or a paella its also a bit risotto-ish. Let me know what you think. Its one of the most flavorful low calorie dishes I’ve made, and one of the best quinoa dishes as well.


For Chicken Marinade:

1 lb. diced boneless, skinless chicken breast

6 cloves garlic diced

1 tbsp. olive oil

salt & pepper

1/2 cup shredded basil

For The Quinoa:

1 onion diced

4 cloves garlic diced

1/2 cup mushroom sliced

4 bird pepper chilies finely cut(optional)

1/2 cup spinach whole

1 bell pepper diced

1/2 cup white wine

1 cup chicken stock- low sodium

1 can diced tomatoes

1 cup cherry tomatoes

2 tbsp. tomato paste

1/2 cup shredded basil

1/2 cup crumbled feta



Preheat oven 350 degrees.

In a bowl, marinate chicken with the olive oil, 6 cloves garlic & 1 tbsp. olive oil.

Set aside.

Dice and chop all of the remaining ingredients.

In an oven proof large skillet, on medium high, spray with a little bit of oil, add the chicken. Cook for 5 minutes, should still be pink on the inside. Once browned a bit, remove from the pan.


Reduce the heat to medium-low, add the onions and garlic cook for 2 mins. then add the mushrooms & bell pepper, cook for 5 minutes.

De-glaze the pan with the white wine, then add the canned tomatoes, tomato paste, chili peppers, chicken stock and spinach.

Simmer for 2 minutes then add the chicken, Turn to in-corporate everything.

Place the skillet in the oven, bake for 15mins. Cover and bale for another 15mins.

Remove from the oven, add the shredded basil and feta.
