This has to be, the all time, fanciest looking, but easiest recipe ever!
Preheat Oven 425 degrees
Pinch of Salt & Pepper
Bird Pepper Chili’s (optional)
Cut the avocado in 1/2, remove the seed and any remnants of the skin from the seed, I used a bread pan for mine so that it doesn’t tilt over, spilling the egg- if you do not have a bread pan, use any baking dish being sure to prop it up on the sides.
Crack an egg into each avocado opening. Bake for 15-20 mins- remove from the oven- sprinkle with salt, pepper, chives and finely cut chili (optional) I used fresh chili’s as I did not want to use to much salt, 1- because i love chili’s and 2 because it adds extra flavor which makes up for the lower sodium.
Serve right away- as an option you can sprinkle finely grated Parmesan over the cooked avocado and egg.
